The following are but a sample of the many popular Chile recipes that have been sent to the CH List. Become a member (See "B003") to get the latest recipes and much more information about Chile recipes and ChileHead activities in general. (This current listing is just a representative beginning.)

These were at the October 2000 Hot Luck, held in Warren NJ, which was seen on "Eat the Heat".
            Rating:  very, very hot  (that's why they are "Evil").

AKA "The Bread", from Jim Campbell.   Extremely hot.   Really good - it's been to many hotlucks.
          But, about as evil as Doug's Cookies.   Both machine and oven methods given.

R015   Colonel Ian's Thai Recipes
       
For several years, until his death in December of 1997, Colonel Ian F. Khuntilanont-Philpott was a major contributor of Thai recipes.   Many of the recipes are by his wife, Muoi Khuntilanont, a professional chef.   Several people have collected these recipies in the form of a MS Word documents.   One such collection, containing 163 recipes, was obtained by me on 1/17/99. Nearly all of the recipes include chiles/chillis, and range from mild to very hot.
        To maximize accessability, I have now converted this collection to HTML and placed it online.   For convienence, it also includes an alphabetized, "clickable" index.   Also, each recipe is in the equivalent of plain ASCII text (no HTML within a recipe) to provide for maximum flexibility for copying and pasting selected recipes into various editors.

Appetizer

This hummus will woop your butt!   Hot stuff.   Be careful.

Uses bacon and horseradish.   Flexible recipe - this can be made mild or very hot.

Sauces

These two recipes are for Caribbean habanero sauces, the first rated medium hot, the second extremely hot.

Main Dish

Small chuncks of beef in a flavorful, spicy Texas style sauce.   This is a official CASI award-winning recipe.
            (Note that beef is easier to dice whwn it is sliced and frozen.)

A lightly spicy rich chocolate brownie.  Serve these to folks who don't know and they will be quite surprised!
